Can anyone out there share a good cake (or pie) recipe that has no sugar or flour?Sugar-free, flour-free cake recipe?
When I was a chef I used to make a flourless chocolate cake, that can be made with carob.
For the flour portion I used ground almonds and potato starch, you separate the eggs, then mix the the almonds, pototo starch, the melted choclate (semi sweet or milk or both) or carob and the yolks, fold in the beaten white, I would use fine sugar or honey in the whites. I baked it in a spring form pan, it is easier to get out, but a tart pan or 8'; cake pan is fine, just be careful removing it.
Bake it at 325 for 45-60 minutes, it should test clean with a toothpick or small knife, you can ice it, but melted chocolate or a dusting of powdered sugar is fine too, serve it with whipped cream or ice cream.Sugar-free, flour-free cake recipe?
I dont think that is even possible!
There are some jello cake recipes that you can find at jello.com. They require nothing else except some jello and maybe some fruit. I love the one that looks like the american flag.
Someone might be able to share a recipe for pie that has no sugar and no flour, but it would not be a good cake or pie. Cake and pie by their very nature require good ingredients, otherwise you wind up with dry cake and pebbly pie crust. If you're trying to avoid sugar and flour, then don't even bother attempting to make either of these confections because you will waste valuable time and ingredients on something that can never satisfy on that level. Ever.
Now, I can tell you how to make a sugarless apple pie but it won't come close to apple pie as most of us know and lip-smackingly think about. I came up with this years ago for a friend who had been diagnosed with diabetes and thought she couldn't have pie at Thanksgiving. Fortunately, cider, apples and raisins were all on her ';allowed'; list, so I was able to work this out for her.
Take any apple pie recipe and substitute apple cider and raisins for the sugar in half quantity. So, if the recipe calls for 1 cup of sugar, replace that with 1/4 cup of raisins in 1/4 cup of apple cider. I then usually add more spices: nutmeg, cinnamon and ginger, sometimes cloves depending on what kind of apples I'm using. Orange juice works instead of cider as well, but I prefer adding orange zest to zip up the flavor.
I would never consider making any baked good with any sugar substitute, ever. If I can't have the ';real thing';, I'm going to go without and find some other way of satisfying my sweet tooth. Cake and pie without flour? You'd only set yourself up for disappointment.
