Banana Cake
When our daughter, Robbyn, married Ronald Slavin, two boot-shaped cakes flanked their traditional cake. Ronald requested that one be his favorite鈥?banana.
Ingredients:
1 package (18-1/4 ounces) yellow cake mix
1 package (3.4 ounces) instant banana pudding mix
1-1/4 cups water
1/3 cup vegetable oil
2 eggs
2 teaspoons banana flavoring*
Frosting of your choice
Directions:
In a large bowl, combine the cake and pudding mixes, water, oil, eggs and flavoring. Beat on low speed for 1 minute or until moistened; beat on medium for 4 minutes.
Line a 13-in. x 9-in. baking pan with waxed paper; grease and flour paper. Pour batter into prepared pan. Bake at 350掳 for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Frost. Yield: 12-16 servings. Editor's Note: Banana flavoring is available at cake decorating and candy supply stores.

Peanut Butter Banana Cake
I've had this well-worm recipe for as long as I've been married. I often make it for potluck functions. The ladies love it, but the heavy texture is a real favorite with men.鈥擫ee Deneau, Lansing, Michigan
Ingredients:
1/2 cup butter, softened
1-1/2 cups Domino庐 or C%26amp;H庐 Granulated Pure Cane Sugar
2 eggs
1 cup mashed ripe bananas (2 to 3 medium)
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup milk
FROSTING:
1/3 cup creamy peanut butter
1/3 cup milk
1-1/2 teaspoons vanilla extract
3 cups Domino庐 or C%26amp;H庐 Pure Cane Powdered Sugar
Directions:
In a large bowl, cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine the flour, baking powder and baking soda; add to creamed mixture alternately with milk, beating well after each addition.
Transfer to a greased 13-in. x 9-in. baking pan. Bake at 350掳 for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
For frosting, in a small bowl, beat the peanut butter, milk and vanilla until blended; gradually beat in confectioners' sugar until smooth. Spread over cake. Yield: 12-15 servings.

Banana Squares
When we were first married, my husband was in the Navy. Stationed in Puerto Rico, we had banana trees growing in our yard, so I found ways to use dozens of ripe bananas at a time. I made these banana squares often. They freeze well and make a great snack to have on hand when friends drop in for coffee. 鈥擲usan Miller, Raleigh, North Carolina
Ingredients:
2 eggs, separated
2/3 cup shortening
1-1/2 cups Domino庐 or C%26amp;H庐 Granulated Pure Cane Sugar
1 cup mashed ripe bananas (2 to 3 medium)
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 cup buttermilk
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts, optional
Whipped cream and sliced bananas, optional
Directions:
In a small bowl, beat egg whites until soft peaks form; set aside. In a large bowl, cream shortening and sugar. Beat in egg yolks; mix well. Add bananas. Combine flour and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition. Add vanilla. Fold in egg whites. Fold in nuts if desired.
Pour into a greased 13-in. x 9-in. baking dish. Bake at 350掳 for 45-50 minutes. Cool on a wire rack.
If desired, garnish with whipped cream and a few banana slices. Yield: 12-16 servi
