Very easy to make and delicious. I don't know where the recipe came from but have been making it for years. About 15 minutes to make when everything is on the counter in front of you.

Change to: unbaked US Metric
3 cups vanilla wafers or graham wafers, crushed
4 bananas, sliced lenghtwise
9 ounces Eagle Brand Condensed Milk
1/4 cup lemon juice
2/3 cup margarine
1 (20 ounce) can crushed pineapple, well drained
1000 ml regular Cool Whip or 1 (16 ounce) container Cool Whip Free
pecans or nuts
maraschino cherries
32 g vanilla instant pudding mix (or your favorite)
coconut
Mix the wafer with the melted margarine; press in a 9X12 pan. (The box says 425g.).
Cover the crust with slice bananas.
Mix the eagle brand milk and lemon juice and spread over the bananas. (The can says 300ml.).
Spread the drained pineapple on top of the milk.
Make the pudding like the recipe on the box and spread on top of the pineapple. (I use the 4 to 6 serving box.).
Cover with a large tub of Cool Whip.
Sprinkle with fine coconut, nuts, and cherries.
Refrigerate overnight.Cake recipe?
I also love the Eclair Cake recipe. It is really good!!! but I use Club Crackers instead. It is not so sweet that way. And instead of making the frosting I buy (I think it is Duncan Hines) canned chocolate flavor with real butter added. Just microwave it for a few seconds to soften a little then spread over crackers. Everyone loves it!!!

Chocolate Eclair Cake
INGREDIENTS
2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package chocolate graham crackers
1/4 cup milk
1/3 cup unsweetened cocoa powder
1 cup white sugar
2 tablespoons butter
1 teaspoon vanilla extract
DIRECTIONS
In a large bowl, combine pudding mix and 3 cups milk; mix well. Fold in whipped topping and beat with mixer for 2 minutes.
In a buttered 9x13 inch baking dish, spread a layer of graham crackers on the bottom of the dish.
Spread 1/2 of the pudding mixture over crackers, then top with graham crackers. Spread remaining pudding over crackers; top second pudding layer with another layer of crackers.
To make topping: In a medium saucepan over medium-high heat, combine 1/4 cup milk, cocoa and sugar and allow to boil for 1 minute; remove from heat and add butter and vanilla. Mix well and cool.
Pour sauce over graham cracker layer and refrigerate until set; serve.
Here is a cake that has been a big hit among my family and friends. Even my 5 year old likes it and he's a picky eater. It is ';baked'; in the microwave. And believe me it tastes no different then if it were baked the conventional way.
ABSOLUTELY DIVINE MICROWAVE CHOCOLATE CAKE
serves 4-6
preparation time: 10 minutes
ingredients:
1/2 cup of water
1/2 teaspoon vanilla
1/2 tablespoon vinegar
1/4 cup vegetable oil
3/4 cup flour
1/2 cup sugar
1/4 teaspoon baking soda
1/8 cup powdered sugar
1 tablespoon cocoa
pinch of salt
1/2 cup bittersweet chocolate chips
directions:
Blend dry ingredients thoroughly. Add the liquid ingredients blending into a light brown mixture. Pour into a greased 1 qt. microwave safe baking dish. Add chocolate chips and microwave on high for about 1 minute. Stir in now melted chocolate. Microwave for another minute and then let it stand until cool. Frost if desired, but this cake is rich enough that it tastes great unfrosted and that is actually the way my family prefers it.

Take store bought pound cake, slice into 2 inch pieces {you will need 2 slices per person.
slice 1 quart fresh strawberries {You can use any kind of berry}add 2 cups strawberry glaze and 1/2 sugar. let set for an hour
Place 1 slice cake on small plate place 1 cup berry mixture on. Top with 2nd layer of cake.
Use whip cream as an icing, spread over top and all sides.

4 cups graham cracker crumbs
1 stick melted butter
1/2 cup sugar
mix together and press in bottom of Glass cake pan

1 large tub whip cream

1 1/2 ounces unsweetened chocolate
1/2 cup water
1 cup butter
1 cup all-purpose flour, sifted
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 teaspoons vanilla
nine chocolate covered mint patties (optional)
NOTE: this recipe is for use on an electric range or hot plate only. Do not use with with a gas stove.
Choose a heavy cast-iron skillet or Dutch oven with a tightly fitting cover.
Place chocolate, water and butter into a 2 quart saucepan and cook over medium heat until chocolate has melted.
Sift together dry ingredients and mix with melted chocolate until smooth. Stir in egg, milk, and vanilla; beat with a spoon or electric mixer for one minute.
Cover tightly and bake 40 minutes on top of the stove using the lowest possible heat setting.
Cake is done when top springs back in the center when pressed lightly with finger.
Uncover and allow to cool five minutes before removing from the pan. Turn out and turn right side up.
Arrange nine chocolate covered mint patties over top of cake while cake is still hot so that chocolate will soften and in three to five minutes. Use a knife or spatula to spread softened mints.
you can do cake without an oven,take cake mixture in a cake mould,take a pressure pan and take sand(sea sand or river sidesand) %26amp;heat it with a stand on it when hot place the cake mould on top %26amp;cover with a lid of the pressure pan,be sure to remove the gas cut allow to cook for aboutt 50 mins (time depends on the amount of cake mix).
