3/4 cup shortening

1/4 cup water

1/8 teaspoon salt

Ganache Frosting

Recipe courtesy Alton Brown, 2004

Show: Good Eats

Episode: Art of Darkness III

16 ounces bittersweet chocolate, chopped fine

16 ounces (2 cups) heavy cream

Place the chopped chocolate into the bowl of a food processor.

Heat the heavy cream in a quart-sized, microwavable container and microwave for 3 to 4 minutes on high, or until it just begins to simmer; be careful not to allow cream to boil over. Pour the cream over the chocolate and let stand for 2 minutes. Process by pulsing several times until chocolate mixture is smooth. Use as is for glazing. If you wish to make a lighter frosting, allow it to come to room temperature, approximately 2 hours. Once at room temperature, place in the bowl of a stand mixer and whisk on high for 2 to 3 minutes.
Use the same recipie that you may find in any pastry cookbook. IF there is a recipie for frosting that may call for dairy (i.e.: milk) then substitue LACTAID Milk either 2% or

whole milk. Blend as the frosting recipie states. Depending on how lactose intolerant you are, LACTAID brand milk does not react with me at all. For now 2 months, I have enjoyed my Lactaid 2%Milk with Cereals. Yum! I had not enjoyed Cerel like that in some 35 years. Most frostings are mostly sugar, flour, some protein as in eggs. Blend well with your hand mixer or stand mixer. Apply frosting to lactose-fee caske as you would any other cake.
i do, just answer a few questions about the cake on IM please?
