Does anyone have a good recipe for Banana cake?

This is a banana cake with pecans and raisins. INGREDIENTS:


1 cup shortening


2 1/2 cups sugar


3 cups all-purpose flour, sifted before measuring


1 1/2 teaspoons baking soda


1 teaspoon salt


4 egg yolks, beaten


6 tablespoons buttermilk or sour milk


2 teaspoons vanilla extract


2 cups mashed ripe bananas


1 cup chopped pecans


1 cup chopped raisins


4 egg whites, beaten


PREPARATION:


Cream shortening and sugar. Combine dry ingredients in a separate bowl. Add dry ingredients to the creamed mixture alternately with egg yolks and buttermilk. Stir in vanilla, mashed bananas, and chopped pecans. Fold in beaten egg whites. Spoon batter into a greased and floured tube pan; bake banana cake at 325° for about 1 1/2 hours.


Serve with whipped cream or ice cream. If desired, drizzle cake with glaze or frost when cooled.Does anyone have a good recipe for Banana cake?

125g/4oz butter, softened


180g/6oz caster sugar


2 eggs, lightly beaten


250g/9oz plain flour, sifted


2 tsp baking powder


4oz/125ml milk


3 bananas, mashed





preheat oven to 180C/350F/Gas 4. Grease a 30cm/12in x 23cm/9in rectangular baking dish. Line the bottom with greaseproof paper.


2.Beat the butter and sugar until pale, about 5 minutes. Slowly add the eggs.


3. Sift the flour and baking powder together.


4. Fold in half the flour then half the milk. Add the remaining flour and milk and fold until combined. Fold in the mashed bananas.


5. Put into the tin and smooth out. Bake for about 25 minutes until a skewer comes out clean.





or This recipe makes a very moist, very dense banana cake with a smooth cream cheese icing. The cake doesn't rise much so it has a nice flat top for presentation. We served the cake at room temperature and topped each slice with a little passionfruit pulp.





You will need about 2-3 large bananas for this recipe.





125g butter, softened (if using unsalted butter, add 1/4 teaspoon salt with the flour)


330g (1 1/2 cups) caster sugar


280g (1 very slightly rounded cup) very ripe, mashed banana


1 teaspoon vanilla


2 large eggs (we use eggs with a minimum weight of 59g)


100ml (1/3 cup + 1 tablespoon) buttermilk


225g (1 1/2 cups) self-raising flour


1/2 teaspoon bicarbonate of soda





Preheat oven to 170 degrees Celsius. Grease and line a 22cm diameter springform pan.





Place butter, sugar, banana, vanilla and eggs in a food processor.Process for about 2 minutes. Scrape down sides of processor. Add buttermilk and pulse to combine. Sift flour, salt (if using) and bicarbonate of soda together into a large bowl. Add flour mixture to food processor and process until just combined. Pour batter into prepared tin. Bake for about 50-60 minutes, or until a skewer or knife inserted in the centre of the cake comes out clean. Leave cake to cool on a wire rack.





Spread cooled cake with cream cheese icing. Store cake in an airtight container in the refrigerator.





Cream Cheese Icing


90g cream cheese, softened


45g butter, softened


210g (1 2/3 cups) icing sugar


1 1/2 teaspoons lemon juice





Beat cream cheese and butter with an electric mixer until creamy. Add sifted icing sugar and beat until smooth. Add lemon juice and beat to combine. Spread icing over top and sides of cooled cake

I don' t do cake mix from scratch anymore, you can doctor it up it is too easy to get a ready made cake mix.


Get your vanilla flavoring

Get your egg that is needed for the cake mix


If you like walnuts add them .


Mix Everything together,


When finish baking. Use a nice vanilla frosting and slice bananas on top. They may turn Brown so I think that you should get the ripe ones and marinate.
Banana Cake:

1 cake





125 g butter


1 cup sugar


1 egg


1 1/2 cups flour


2 tablespoons milk


1 teaspoon baking soda, dissolved in the milk


1 teaspoon baking powder


3 mashed ripe bananas


1 teaspoon vanilla essence


1 pinch salt





1. Cream butter and sugar, add egg and soda thats been dissolved in the milk, then add bananas and dry ingredients and vanilla essence.


2. Mix well.


3. Bake in 8 inch square pan in moderate oven (350F or 180C) for 30-40 minutes or until skewer comes out dry.


4. Ice with favourite icing.
Easy Chocolate Banana Cake


2 large ripe bananas


1/2 tsp vanilla flavouring


175g butter


225g granulated sugar


275g self raising flour


1/2 tsp bicarbonate of soda


3 eggs (beaten)


100g chocolate chips


Grease and line two 8 inch sandwich cake tins with greased greaseproof paper.





Peel the bananas and mash until smooth in a small bowl with vanilla flavouring.





Gently heat the butter and sugar in a saucepan until dissolved. Remove from heat and stir in flour and soda. Beat in eggs and mashed banana. Cool slightly. Stir in chocolate chips, and spoon into tin.





Cook at 170C for 35 mins or until skewer inserted into center of cake comes out clean.





Decorate with melted chocolate and bananas if you wish.





Serve with whipped cream as a pudding or on it's own as a cake.

Yoghurt Banana Cake


½ c. butter or margarine, cut in 2 large bananas (very ripe)


chunks 1 tsp. baking soda


1½ c. sugar ¾ c. plain yoghurt


2 eggs 1 tsp. baking powder


1 tsp. vanilla 2 c. flour


Steel Knife: Process butter, sugar, eggs and vanilla for 2 minutes, scraping down bowl once or twice. Do not insert pusher in feed tube. While machine is running,drop chunks of banana through feed tube. Process until blended.


Meanwhile, dissolve baking soda in yoghurt. Let stand for I to 2 minutes. Yoghurt will nearly double in volume, so use a 2 cup measuring cup. Add to batter and process for 3 seconds. Add flour and baking powder. Process with 4 quick on/off turns, just until flour mixture disappears. Bake in a greased and floured 9” square baking pan at 350°F for 50 minutes, until cake tests done. Cool 10 minutes. Remove from pan. Freezes well.


Yield: 9 servings.


Garnish with walnut halves-.


Note: Sour cream may be substituted for yoghurt, if desired. Sugar may be reduced to 1 1/4 cups, but will produce a lighter colored cake.


BANANA ORANGE CAKE: Substitute orange juice for yoghurt. Do not dissolve baking soda in juice. Decrease baking soda to Y2 tsp., increase baking powder to 2 tsp. and add to batter along with flour.


CHOCOLATE CHIP BANANA CAKE


Follow recipe for Yoghurt Banana Cake (above), but add I or 2 squares of semi-sweet or unsweetened chocolate, halved.


Using Steel Knife, process chocolate until finely chopped, about 25 to 30 seconds. Remove from bowl. Continue with recipe for Yoghurt Banana Cake, and add chocolate with dry ingredients. Bake as directed. Freezes well.


Yield: 9 servings. Frost with Chocolate Cocoa Frosting (p. 267) or Banana Frosting (p. 266).


BANANA NUT CAKE


Follow recipe for Yoghurt Banana Cake (above), but add 3/4 cup walnuts, pecans or brazil nuts.


Using Steel Knife, process nuts with several quick on/off turns, until coarsely chopped. Remove from bowl, Continue with recipe for Yoghurt Banana Cake, and add chopped nuts with one or two quick on/off turns after the flour has been blended into tl


batter. Bake as directed. Freezes well. .


Yield: 9 servings. May be frosted with Chocolate Frosting, Cocoa Frosting or Banana Frosting Garnish with appropriate nuts.

1 cup white sugar


3/4 cup light brown sugar


2 eggs


4 ripe bananas, mashed


2/3 cup buttermilk


1/2 cup chopped walnuts


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 8 inch round pans. In a small bowl, whisk together flour, soda and salt; set aside.


In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared pans.


Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.
