Light Cake recipe?

I am looking for a recipe to make well.. a perfect cake. It has to be simple (and relatively easy to make), with a light and airy texture, not the type of cake that leaves you moaning on the floor after a half a slice. The flavour should be soft, and delicate. It can't have chocolate or alcohol in it, so maybe a vanilla cake woulde be good.Light Cake recipe?
Homemade Angel Food Cake





18 egg whites


2 teaspoons cream of tartar


1 pinch salt


1 1/2 cups white sugar


1 cup cake flour


1/2 cup confectioners' sugar


1 teaspoon vanilla extract





Preheat oven to 350 degrees F (175 degrees C). Sift cake flour and confectioners sugar together 5 times and set aside. In a large clean bowl, whip egg whites with a pinch of salt until foamy. Add cream of tartar and continue beating until soft peaks form. Gradually add sugar while beating, and continue to beat until very stiff. Add vanilla.


Quickly fold in flour mixture. Pour into a 10 inch tube pan. Bake at 350 degrees F (175 degrees C) for 45 minutes.Light Cake recipe?
Don't know if you want it from scratch or not. If you want to start with a box cake and modify it, then take a yellow cake mix and a can of whatever kind of fruit you want (peaches, pears, fruit cocktail - just not cherries or red fruit). Drain the fruit, saving the juice. Puree the fruit until there are small chunks left. Use the juice for part of the water the box calls for. Make the recipe from the box and after it's all mixed, gently mix in half the pureed fruit and pour in your pan and bake it by the box directions. Then when it is done, make a glaze using the other half of the fruit - in a skillet, and enough sifted baking powder to thicken it just a little - you don't need it to set up white. Then poke holes in your hot cake with the pointed end of a meat thermometer and pour the icing over the top of the cake (I always bake it in a sheet cake pan and serve it from that). The cake will be super moist, very light, and won't knock you to the floor from the weight of it. A very nice light dessert cake. You could top the icing with Cool whip on each person's slice but then you are starting into the ';sink to the floor'; cake.
