Red Velvet Cake





1 1/2 c sugar


1 c shortening


2 eggs


2 c flour


dash of salt


1 T cocoa


1 c buttermilk


1 T vanilla


1 T vinegar


1 t soda


2-1oz bottles red food coloring





Cream sugar, shortening, eggs and beat. Sift flour, salt, cocoa and add alternately with buttermilk. Add vanilla and cake coloring and beat well. Mix vinegar and soda and fold into batter. Bake in two 9 inch pans 30 to 35 minutes at 350 degrees.





Icing





Cook to a pudding:





1 c milk


1/4 c flour





Cream:





1 stick margarine


1/2 c shortening


1 c sugar


1 t vanilla





Add cooked (cooled) pudding and beat well. Ice cake and cover with coconut.





Chocolate Kiss Cookies





1/2 c shortening


1/2 c peanut butter


2 eggs


1 t vanilla


1 3/4 c flour


1/2 c white sugar


1/2 c brown sugar


2 T milk


1/2 t salt


1 t soda


1 pkg chocolate kisses





Cream sugars and shortening. Add eggs one at a time, beating well after each one. Add remaining ingredients, except for chocolate kisses. Form into small balls and roll in sugar. While Frosting





White Frosting:


2 tablespoons flour


1 cup milk


1 cup unsalted butter


1 cup confectioners' sugar

Method:





Preheat oven to 350 degrees F.





In the bowl of a mixer, cream together the shortening, eggs and sugar. In a separate small bowl, mix together the cocoa and food coloring. Add the paste to the shortening mixture. Sift the flour and salt together over parchment. Add to the batter alternately with the buttermilk in 3 additions. Add the vanilla extract. Fold in the baking soda and vinegar. Pour the batter into 2 greased 9-inch cake pans. Bake for 30 minutes or until an inserted cake tester comes out clean. Let cool on a cooling rack. Invert the cakes from the pans.





Frosting: Over medium heat, cook the flour and milk until thickened. Let cool. In the bowl of an electric mixer, cream together the butter, sugar and vanilla until light and fluffy. Beat in the flour mixture.





Frost the top of the first layer with frosting and set the second layer on top. Frost the entire cake with remaining frosting.

Method











Put the butter, both sugars, salt and the baking soda in a large mixing bowl and beat with a mixer for about 3 minutes. Blend in the eggs and vanilla extract. Reduce the mixer speed and add the flour gradually.











This cookie dough is best used when chilled so try to mix it up ahead of time to allow for a couple hours in the refrigerator. Chill between batches.

Ingredients:


1 stick plus 5 Tablespoons butter, softened


1/4 cup confectioner鈥檚 sugar


1 tsp vanilla extract


1 cup all purpose flour, sifted


1/4 cup cornstarch, sifted

Preparation:


Preheat the oven to 180潞C.


Beat the butter, icing sugar and vanilla extract in a bowl until light and fluffy. Stir in the flour and cornstarch until combined. Set aside 1/4 of dough and colour with pink food colouring.


Take 1 tsp of uncoloured dough and shape into a ball. Place on a greased baking sheet.


Place the pink mixture into a piping bag fitted with a star nozzle. Pipe a flower/star onto the ball of uncoloured dough. Bake for 12-14 minutes or until golden. Cool on trays.





Million Dollar Cookies





Ingredients:


1 c. shortening


1/2 c. granulated sugar, plus more to roll cookies in


1/2 c. brown sugar


1 egg, slightly beaten


1 tsp. vanilla extract


2 c. flour


1/2 tsp. salt


1/2 tsp. baking soda


3/4 c. finely chopped walnuts, if desired


1/2 c. flaked or shredded coconut


Preparation:


Preheat oven to 350 degrees. Line baking sheets with parchment paper.


In a large bowl, using an electric mixer on medium-high speed, beat shortening, granulated sugar and brown sugar until light and creamy. Add egg and vanilla extract and mix until well-combined.


In a medium bowl, whisk together flour, salt and baking soda. Reduce speed to low and gradually add to the sugar mixture. Stir in nuts and coconut.


Roll dough into balls about 1 1/2 inches in diameter, then in granulated sugar. Flatten with the bottom of a glass that has been dipped into granulated sugar (to prevent sticking). Bake for 10 to 12 minutes until set and edges are barely browned. Remove from oven, cool for 2 minutes then transfer cookies to a wire rack to cool completely. Makes about 3 dozen cookies.

Ingredients:


2 sticks unsalted butter


2 1/4 cups bread flour


1 teaspoon kosher salt


1 teaspoon baking soda


1/4 cup sugar


1 1/4 cups brown sugar


1 egg


1 egg yolk


2 tablespoons milk


1 1/2 teaspoons vanilla extract


2 cups semisweet chocolate chips


Preparation:


Heat oven to 375 degrees F.


Melt the butter in a heavy-bottom medium saucepan over low heat. Sift together the flour, salt, and baking soda and set aside.


Pour the melted butter in the mixer鈥檚 work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips.


Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.





Maple Butter Cookies





Ingredients:


1 3/4 c. Butter


1/2 c. Brown sugar, firmly packed


1 Egg


1/2 c. Vermont maple syrup


1 tsp. Maple flavoring (opt.)


2 1/4 c. All-purpose flour


2 tsp. Baking powder


1/2 tsp. Baking soda


1/4 c.Walnut halves


Preparation:


Preheat oven at 400 degrees. Cream butter thoroughly. Gradually add brown sugar and beat until fluffy. Add the egg, maple syrup, maple flavoring, all purpose flour, baking powder, baking soda and beat well. Drop by rounded teaspoons on ungreased cookie sheet. Top each cookie with a walnut half. Bake in preheated oven at 400 degrees for 8 to 10 minutes. Yield: 3 dozen
