Does anyone have a really delicious light and airy sponge cake recipe for me? (One to fill with jam and cream) When I was a kid I used to make a delicious one but have tried making it recently and it's just not the same for some reason. Thanks.Sponge Cake Recipe?
AUNT MARTHA'S SPONGE CAKE
3 eggs
1 cup sugar
4 tbsp. warm water
1 cup flour
1 level teaspoon baking powder
1 teaspoon flavoring extract
In a medium sized bowl, add eggs and beat 1 minute at half speed. Add sugar and beat together 5 minutes more until thick and lemon colored. Add 4 Tablespoons warm water and mix again 1 minute. Sift together flour and baking powder and stir into wet ingredients. Do not overmix once the flour is added or cake will be tough. Add flavoring extract (vanilla, etc). Place in a shallow pan. Oven at 400 degrees for 5 minutes then at 375 degrees for 20 minutes
I suggest you fold the flour in by hand.

Family recipe:
1. Cream together 4oz marg/butter and 4oz caster sugar until light and fluffy.
2. Beat in 2 eggs one at a time and try and incorporate as much air as possible.
3. Add 6oz sifted self-raising flour and 1 teaspoon baking powder and mix well.
4. Add 1-2 tablespoons milk to give a soft dropping consistency (you can also add vanilla essence if liked)
5. Spoon into 2 greased and lined 7'; diameter round tins.
6. Bake for 15-20mins at approx 140 degrees C or until top springs back when pressed lightly.
You can make a chocolate one by replacing 2 tablespoons flour with 2 of cocoa
I find that it doesn't matter so much which recipe you use - you really need to whisk it up well before adding the flour and then be really gentle with it after adding the flour. A good oven helps as well. I lived in a flat once with a dodgy old oven - all my cakes were flat and hard whilst I lived there even though I used the same recipe and method.
Beat 4oz butter (unsalted is best) until it is really pale
Whisk in 4oz caster sugar
Beat in 2 eggs, one at a time, with a little vanilla essence if required
Very gently FOLD in 4oz self-raising flour
Carefully spoon into 2 7'; sandwich tins and bake on the middle shelf of a pre-heated oven (180 C) for 15 - 20 mins until light %26amp; springy.

8oz s.r.flour. 4oz sugar, 4oz margarine,4 eggs, 1teasp baking powder use the all in method, beat till mixture goes light in colour and you want a soft dropping consistency, if it seems a bit thick add a little water. Spread between two 8inch sandwich tins and bake in the middle of the oven for 20-25 Min's on number 5 Always works never fails, when cool make butter cream and spread 1 side with this and other side with jam

6 Whole Eggs
6 Oz's Sugar
6 Oz's SR Flour
Whisk together eggs %26amp; sugar untill light and white fold in flour a little at a time transfer to 10 inch cake tin ( or tray for swiss roll ) 170 c oven / 25 mins remove to cooling tray.
