录 cup margarine
戮 cup packed brown sugar

Best Tasting Apple Cake
2 cups sweet, crisp red apples, cut into 1/4 cubes (peel on)
2 1/2 cups whole wheat pastry flour
1 tablespoon aluminum-free baking powder
2 teaspoons cinnamon
1/2 cup dark Muscavado sugar (or other fine-grain natural cane or brown sugar), lump-free
1/2 teaspoon fine grain sea salt
2 eggs
1 cup buttermilk
1/4 cup butter, melted and cooled a bit
3 tablespoons large grain sugar
Preheat the oven to 400F degrees, racks in the middle.
Butter and flour (or line bottom with parchment paper)
one 9-inch square baking dish or tart pan,
you can also bake it in a 9x13 pan
but really keep a close eye on it after 20 minutes - it will be quite thin.
Place the chopped apples in a bowl of water along with the juice of one lemon.
Set aside.
Combine the flour, baking powder,
cinnamon, sugar and salt in a large bowl.
And in a separate smaller bowl whisk together
the eggs and the buttermilk.
Whisk in the melted butter.
Pour the buttermilk mixture over the flour mixture
and stir until barely combined - try not to over mix.

1/3 cup walnuts, toasted
1 cup sugar
1/2 cup applesauce
1 egg
1 egg white
2 tablespoons canola oil
2 teaspoons vanilla extract
2 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
2 teaspoon ground cinnamon
4 cups apples, peeled and diced
CREAM CHEESE FROSTING:
3ounces fat-free cream cheese, softened
1 tablespoon light butter
1/2 cup powdered sugar
Directions:
Preheat the oven to 350 degrees. Coat a 9-by-13-inch baking pan with nonstick cooking spray and set aside.
Place the walnuts on a baking sheet and toast in the preheated oven for about 8 minutes, or until they are lightly browned. Remove the nuts from the oven and set aside. Watch them carefully, as they burn easily.
In a large bowl, combine the sugar, applesauce, egg, egg white, canola oil and vanilla and mix well.
In another bowl, combine the flour, salt, baking soda and cinnamon. Add the dry ingredients to the wet ingredients and mix well. Fold in the apples and toasted walnuts. Pour batter into the prepared pan. (It will seem like there are more apples than batter, but that's the way it's supposed to look.)
Bake in the preheated oven for 50 minutes to 1 hour, or until a golden brown. Remove from the oven and allow to cool completely on a rack.
While the cake is baking, make the frosting. Combine the cream cheese, light butter and powdered sugar in a bowl and blend until smooth. When the cake is completely cool, spread the frosting evenly over the top. Makes 12 servings.
Each serving contains about: 254 calories, 6 grams fat, 18 milligrams cholesterol, 204 milligrams sodium, 47 grams carbohydrates, 5 grams protein and 2 grams fiber.
