Can someone give me a good recipe for carrot cake (without self-raising flour)?

This is my grandmother's recipe and I've never actually given it to anyone :)





My Nanna's Two Bowl Carrot Cake





First bowl:





1 1/2 cups sugar


1 cup vegetable oil





Beat that well... then add:





3 egg yolks (reserve whites for later)


2 1/2 tbsp. hot water





Second bowl:





1 cup carrots, grated


1 1/2 cups all-purpose flour


1/2 tsp cinnamon


1/4 tsp nutmeg


1/2 tsp baking soda


1 tsp salt


1 tsp vanilla





Mix together contents of each bowl separately first... then together. Beat reserved egg whites until stiff. Fold into batter. Grease and flour tube pan. Pour batter into pan. Bake at 350 for 1 hour.





My nanna used to just make a glaze of confectioner's sugar and milk to pour over this cake... but I've also used cream cheese frosting :)Can someone give me a good recipe for carrot cake (without self-raising flour)?

Here is an easy way to make a carrot cake on the fly (1 box, 1 bowl)





1 box Pillsbury (or anyother) yellow cake mix


1/4 c shredded carrots


1 handful raisins


1/2 tsp cinnamon


1/4 tsp cloves


1/4 tsp nutmeg


1 tbsp molasses





make cake according to directions on the box (minus 1 tbsp of water to make up for the molasses) mix in the rest of the ingredients


bake as directed

KRISPY's CARROT CAKE:


2 cups sugar


1 1/2 cups Crisco oil


4 eggs


2 1/4 cups flour


1 teaspoon salt


2 teaspoons baking soda


2 teaspoons cinnamon


3 cups grated raw carrots


1 1/2 cups chopped walnuts


Mix in large bowl, sugar, oil and eggs; beat well. In separate bowl, sift flour, salt, baking soda and cinnamon. Blend dry ingredients into egg mixture. Stir in carrots and nuts. Pour into prepared pans. Bake at 300 degrees for about 60 minutes or until toothpick inserted in center comes out clean. Cool well before icing.





CREAM CHEESE FROSTING:


1 (8 ounces) package cream cheese, softened


1/2 cup margarine or butter, softened


1 teaspoon vanilla extract


3 cups sifted powdered sugar


1 Tablespoon milk


Cream all ingredients together until spreading consistency.
yes but it still calls for bicarb soda and baking powder does that count as self raising flour?
