Need Recipes For Jenny Cake

I once watched a travelling show where this guy went to a food joint (I think its in Jamaica or another Caribbean island) %26amp; order Jenny Cake. This cake was later stuffed with some meat %26amp; vegies (I think, can't remember exactly).

Jenny Lind cake





It is the basic1,2,3,4 cake found in most cookbooks or on the box of cake flour. Divide into three layers %26amp; to one add 1 cup of chopped raisins %26amp; 1/2 teaspoon of either apple pie spice or pumpkin pie spice. It is a stack cake %26amp; add 2 ladles of brandied peaches in between the layers.

















**If stuffing with meat %26amp; veggies - I would suggest using veggies %26amp; meat you like but use bisquik or corn muffin mix instead of a ';cake'; batter
